Southwestern Style Cornbread:

1 1/2 cups Cornmeal (yellow)
1 cup Flour
3 rounded teaspoons Baking Powder
1/2 teaspoon of Salt

Mix all that up well, beat 3 large or 2 extra large Eggs in a bowl and add them to the dry mix

Add 1 cup of Milk
1 can creamed corn (14 oz can)
1/2 Green Pepper minced (Optional)
6 - 7 Jalapenos
12 oz package of Chedder Cheese (Grated, Sharp)
1/2 pack of Hot Pepper Cheese (6 - 8 oz added)

Oil Pan, heat, and after it is hot, add Cornbread Batter

Bake for approximately 1 hour (check after 45 minutes and then ever 10 minutes after)

If you have it, use Bacon Grease for Oil, if not, olive does second best, followed by peanut then vegtable.
